In Other News

The In-Laws left Sunday,
But not until we had a big breakfast of breakfast burritos, fried potatoes, and biscuits with jelly!
I realize that these foods don't make the best combination, but my father-in-law isn't suppose to eat pork...
Which is in the sausage and potato burritos!

Chris LOVES my fried potatoes, so I made them extra, mainly for him. 

I made the biscuits so we could also try the jelly my mom sent down that she made from scratch!

We were all stuffed. 

And in other news:
Chris and his dad went Saturday and picked up this beauty!!

We uses to race a '78 camero, but will be retiring that body so we can put the engine in this fine piece of equipment!!! 

I am so excited! I can't wait for the guys to get it finished so we can go to the track!!

6th MONDAY - Country Fried Chicken

- 2-3 Boneless Skinless Chicken Breast
-Veggie Oil
-Flour
-Garlic Salt
-Pepper
-Mashed Potatoes
-Brown Gravy Mix
* I like to cut the chicken into cubes because it is easier for the kids to eat!



7th TUESDAY - BBQ Pork
I buy my BBQ Pork at Sam's Club. We eat this on Hoagie buns.
Bake As Directed!


8th WEDNESDAY - Chicken Enchiladas

* Of course, I cheat. I don't like to cook before I cook so I use this chicken in a can. I buy this at Sam's Club also, but I am sure you can get in any grocery store next to the tuna in a can.

Recipe from Campbell's Soup:
1 can Campbell's Condensed Cream of Chicken Soup
1/2 cup sour cream
1 cup Pace Picante Sauce
2 tsp. chili powder
2 cups chopped cooked chicken (2 cans of above chicken in can)
1/2 cup shredded cheese
6 flour tortillas (6"), warmed
1 small tomato, chopped (optional)
1 green onion, sliced (optional)
1/2 cup of onion diced (OPTIONAL, I do this and not the other two!)

1. Heat oven to 350. Stir Soup, Sour Cream, Picante Sauce, Onion and Chili Powder in MEDIUM bowl.
2. Stir 1 cup soup mixture, chicken and cheese in LARGE bowl.
3. Divide chicken mixture among tortillas, Roll up tortillas and place seam-side down in 13x9" baking dish. Pour remaining soup mixture over filled tortillas. Cover baking dish.
4. Bake 40 minutes or until enchiladas are hot and bubbling (I usually only cook for about 25 minutes). Top with tomato and onion.

I have made this MANY times and even Chris likes it. He used to tell me he hated the chicken in the can, but after eating these enchiladas, he changed his mind)


9th THURSDAY - Mexican Chef Salad
1 lb hamburger
lettuce, chopped
tomato, diced
onion, about 1 cup, diced
1 can kidney beans
individual bag of Doritos (1 bag per person)
1 cup cheese

- brown hamburger and cook onion, drain.
- add drained kidney beans to skillet until beans are warmed
- mix lettuce, tomato, cheese in LARGE bowl
-Add hamburger
-Break Doritos and combine one serving salad with chips.
- ADD Picante Sauce as desired!


10th FRIDAY - Roast Beef and Gravy
Roast Beef from Deli, cut into small pieces
Brown Gravy
Mashed Potatoes

Cook Brown Gravy Mix as directed.
When heated, add Roast beef bits until warm/hot.
Pour over serving of mashed potatoes.

*Takes about 10 minutes start to finish to make this!


11th SATURDAY - Beef Fajitas
I get this meat at WalMart, though can get at some Sam's Clubs also.
Green Bell peppers, sliced
Onion, sliced
Cheese
Pico (Jalapeno, onion, tomato, lemon juice, cumin, garlic salt)
small tortillas

Combine meat, peppers, and onion in skillet and cook as directed on fajita bag.
add desired amount to tortilla, along with pico and cheese.


12th SUNDAY - Spaghetti
1 lb hamburger, browned
onion, diced
Spaghetti Sauce 
spaghetti noodles, cooked as directed
garlic bread

That's week Two.

AUGUST Food Calendar!

Okay, I got off my duff yesterday and planned out my meals for August.

I edited my Friday meal because my Father-In-Law is going to be here, so Chris won't be taking me out to eat for a date night. Oh well!

FRIDAY - Filet Minon
Beef Tenderloin (Filet)
Dry Italian Dressing Mix 
(you can just use premade, but I like the homemade flavoring!)
Bacon
Toothpicks!

- Wrap bacon around the Beef and use toothpicks to hold in place.
- Mix Italian dressing as directed and pour over beef to marinade.
- After about 2 hrs., Place meat in cooking pan and bake at 350 for about 25-35 minutes. - until bacon looks done.
(whatever size it fits in. If it is just for Chris and I, I use an 8x8" pan, but if it is for a crew, I use the 13x9" pan)

SATURDAY - Hard Shell Tacos
- Hamburger
- Taco Mix
- Lettuce
- Tomato
- Shells
Small Tortillas (the kids and I don't like the hard shells! I only make this because it is one of Chris's favorites!)
- Pico

SUNDAY - Hamburgers
-patties
-tomato
-lettuce
-pickles
-mayo
-buns
-chips

This Weeks Meal Plan

This is for my Aunt Diane.
On FB she said she wanted lessons on how I do my meal planning...

Well, this week, this is my meal plan:

SUNDAY (today, already happened!) 

CROCK POT BBQ CHICKEN
(This is NOT my recipe. I got it from a crock pot site, though I don't have the link right now.)

4-6 Boneless Skinless Chicken Breast 
(I only used 3 and they were frozen when I threw them in the pot)
1 bottle BBQ Sauce 
(I used STUBBS spicy sauce. It was a little too spicy for my taste, so might have to try something else next time)
1/4 cup vinegar
(Honestly, this is all I could taste so may skip the vinegar next time!)
1 tsp red pepper flakes
1/4 cup brown sugar
1/2 - 1 tsp garlic powder 

Mix BBQ sauce with all ingredients listed below it.
Place chicken in crock pot (4 quart)
Pour sauce over it.
Cook on LOW for 4-6 hours.

I also made Mac N Cheese from the box with this. It gave us a filler side and something the baby would actual eat!


MONDAY - Carne Asada Soft Tacos

Now, I am a great big fan of cheating.
(FOOD WISE PEOPLE, FOOD WISE!)

I am going to use this for my meat:

I get it at Wal-Mart. You can do a search online with your local Wal-Mart selected to see if they supply it.  I do a search for JOHN SOULS and it is the Carne Asada meat. LOVE IT!
I have to drive to the big city to get mine at a Super Wal-Mart. They used to carry a BIG bag at Sam's Club, but have since stopped (really made me IRRITATED!!!)

So, other than my meat, I have to make sure I have:
Jalapenos 
Onion
Tomato
Lettuce
Tortillas 
Lemon Juice
Cumin
Garlic Salt

I add garlic salt to the meat while frying. All the meat takes is 7 minutes in a skillet to be done.
I make my own pico. I finely dice the jalopeno, onion, and tomato. I add a dash of cumin and garlic salt to the top and then put about 2 tbs Lemon Juice and mix.


TUESDAY - BLT
Pretty Easy meal.
Shopping List:
Bread
Tomato
Lettuce
Bacon
Mayo

We will probably have some chips with this.


WEDNESDAY - Breakfast Burritos
Shopping List:
Sausage
Potato (it is up to you how many you add. We just do one large)
Diced Green Chili (4 oz can)
Tortillas (which I probably already have from MONDAY's list)
Items for Pico (I made on Monday for Soft Taco's so won't have to make again)

- clean up potato and put in a ziplock bag. Microwave 4 minutes for each potato.
(I usually do this a few hours before dinner so the potato is cool enough for me to cut up)
- Fry the sausage and drain most of the grease, if not all.
- While cooking sausage, cube potatoes
When sausage is done, add potatoes and green chili
- Continue to cook until potatoes are hot.
WE don't like to add egg this late in the day, but that is up to you!
Put in tortilla.


THURSDAY - Roast
Will need to thaw a roast from my freezer on Wednesday Night...
Shopping List:
Roast
Brown Gravy Mix (x2)
Dry Ranch Dressing
Dry Italian Dressing
Potato
Baby Carrots

To Cook:
Put Roast in Crock Pot (4 quart)
Mix Brown gravy, Ranch & Italian dressings with 2-3 cups water (do not go more than 4)
Pour over roast.
Cook on LOW 6-8 hours.
Put cubed potato and baby carrots in about 45 minutes before roast is done.

Serve.

FRIDAY - 
I haven't gotten this far. We are actually at the end of the month, so I haven't sat down to work on my next month of meals...
PLUS, it is a Friday... I will probably tell Chris I am making something he hates, so he just might decide to take me out to eat!!!
He is very busy right now, so probably not, but it is an idea!

I did switch up a few days there, but kept to my schedule for the most part. I had almost the whole month planned out before July even started!

This makes it so much easier for me. I hate trying to figure out what to make each day. If I don't know what I am making that night, I would cook the same thing every night, or just make pizza!

Crock Pot Sunday

Okay, so I am finally ready to share with you my Mother-In-Law's recipe for her French Dip Brisket.

SO YUMMY!

Ingredients: 
Celery Salt
Onion Salt
Garlic Powder (or salt, but I prefer to use powder since already using two salts)
Liquid Smoke
3-4 lb Brisket


Now, when my MIL makes this dish, she is usually feeding an army, so she will double the size of the brisket and use two bottles of the liquid smoke.

Because the slab of meat is usually pretty large, I take a trash bag (big kitchen trash bag and my MIL taught me this too!) and put the meat inside it. I sprinkle all the dry ingredients on the meat. Don't need a ton, but enough to have each one sprinkled on the entire surface.

Now add the liquid smoke onto the meat. Throw into fridge overnight to marinade. 
*Tie the bag closed first to make sure the liquid doesn't leak all over your fridge!

Put 3-4 lb brisket in a 4 quart crock pot and add water to cover meat. Cook on LOW for 6-8 hours.

I usually start this in the morning and then forget about it until it is time to eat!

We eat this on hoagie style buns and dip in the liquid for a french dip that actually has flavor! 


One of my FAVORITE dishes! So easy to make, takes very little time to do, and turns out fabulous every time.  Only thing is you have to decide the day before that you want it so you can let it marinade in the ingredients. 

Oh, and if you are in the house while this cooks, be prepared to be starving ALL day long because it smells SOOOO good while cooking it makes your tummy want it NOW!

It is a killer when staying at my MIL's house before a big get together because she will cook it all night... and it has woken me up in the middle of the night wanting to go eat because it smells so good! 

TORTURE!!!

Crock Pot Sunday

So, last Sunday, I made Au Jux Brisket… French Dip Brisket!

SOOOO GOOD! 

But, that is not what I am going to share with you TODAY!

TODAY, I am going to tell ya all about the CREAMY ITALIAN CHICKEN I made in the crock pot last Friday…

On Friday, I thought I was going to have to take some food out to the farm for dinner… Feed my household, plus the harvesters.  So 9 adults and the 2 boys…

I thawed 5 Large Chicken Breasts to throw in the pot. I started cooking… called Chris to tell him about what time I would be there, JUST to have him let me know they were quitting early and would be coming in for dinner!!!

So my dinner for 9+ turned into 3 adults and the 2 pint size eaters!

Oh well! 

So today I will share with you TWO recipes…

CREAMY ITALIAN CHICKEN and CHICKEN ENCHILADAS I made with the leftovers!

CREAMY ITALIAN CHICKEN:
4 Chicken Breasts (I added the extra one to add for extra people)
1 Italian Salad Dressing Mix
8 oz cream cheese
1 can of Cream of Chicken Soup
¼ cup water
desired amount of rice (I just make instant rice for appropriate serving size)

In slow cooker, cook chicken, water & packet of Italian dressing on LOW for 3-3.5 hours. When chicken is done, shred. On stove, cook cream cheese & cream of chicken on low until hot, mix with shredded chicken. Cook rice as directed.

Okay, Chris does NOT like the creamy part of this recipe, so I don’t combine everything until it is on my own plate.   

And for this reason, I was able to save 3 chicken breasts for “leftovers”…

SO, to make something different with the chicken so Chris would eat it since he hates “leftovers”, I decided to make Chicken Enchiladas.

This was the first time I had EVER made enchiladas… and I was a little nervous to tell you the truth!  I didn’t realize how EASY they are!

So I took the leftover chicken, and by this time there were only 2 chicken breasts left since my dad isn’t apposed to “leftovers!”  So I took the TWO chicken breasts and tore them to shreds!  Threw that in a sauce pan with a 4.5 oz can of diced green chili and a package of cream cheese and cooked on low until it was all nice and warm.  From there, I spooned the mixture into some Corn Tortilla’s (small ones) and rolled them once and placed in a baking pan, seem down.

Chris doesn’t care too much for green enchilada sauce (which is my favorite since I hate the red sauce!), so I made one 8x8 pan of red enchiladas and one 9x9 pan of green enchiladas. 

My tortillas didn’t stay together very pretty, but it worked. I was told later by my Sister In Law that I needed to heat the tortillas on the stove for a minute to make them more flexible… Oh well, they tasted great!


CHICKEN ENCHILADAS:
1 lb shredded chicken breast
4.5 oz can diced chili
1 package cream cheese
1 can Enchilada Sauce
Tortillas

Bake on 400 for 15-20 minutes.
*If you aren’t using left over chicken, you can use a pound of chicken breast, cut up and cooked on stovetop until no longer pink before adding the rest of the ingredients. 

Crock Pot Sunday

So yes, 
Today is Wednesday... 
But, I use my crock pot on most Sundays so I can go to church and not worry about dinner for that night or what needs thawed, or spend time in the kitchen while Chris and both boys are home.


This past Sunday, I made Red Wine Short Ribs. I ended up with short ribs after we had our last steer butchered, and I had NO idea what to do with them. I was very excited when I finally found a recipe on Crock Pot Girls website.
(The meat fell right off the ribs)

This dish turned out really good. Chris was very surprised how good it turned out after he took a sip of the wine and told me just how awful the wine was!  
(pretty green bottle though!)

The bad wine taste had no affect on how good the meat turned out though!  

I didn't have any garlic cloves, so used diced garlic that I already had in my fridge. I used two Table Spoons.

Chris did think he needed a little BBQ sauce, but since I didn't have any in the house, figured the meat was just fine without it!



I love this thing cause it has 3 bowls... a 2 quart, 4 quart, and 6 quart bowl that fits in the base. I can switch out the bowl for whatever size I need and don't have to have multiple crock pots that take up a ton of room.

Slower Cooker Roast

So this isn't my typical post...

BUT, I wanted to share a website I got from facebook called 

There are SO many recipes on there for so many different things.

I wanted to make a roast in the crock pot on Sunday. I hate to cook on Sunday's. It is just a good day to be lazy and not have to worry about cooking.

So I went to Crock Pot Girls and found this recipe: Slower Cooker Roast.

It turned out so freaking amazing! So good.

How come no one ever told me to use Brown Gravy Mix with my roast before?  
My mom doesn't do it...
My Mother-In-Law doesn't do it...
But now that I have tried it, I have told them to try it. 
And now I am telling you to try it!

SO FREAKING GOOD!
